Honey-Chicken Fajita Burritos

Do your stomach a favor, and make these. So yummy! Unfortunately, I couldn't think of a better name to call them. I know burritos don't usually have green peppers so I thought I'd call it a fajita but then I realized that fajitas don't usually have sour cream and cheese, right? Am I making this up? So fajita burrito sounded about right. And I know honey-chicken sounds a bit out of place with burrito and fajita, but it sounded good at the time so just go with it.


Honey-Chicken Fajita Burritos
Serves: 2 


What you need:
1/4 pound boneless chicken breast
1/2 medium red onion
1 medium green pepper
Honey
Paprika
Corn
Sour Cream
Cheddar cheese
Tortillas (2)
Salt
Oil
Salsa, to serve

1. Fry the onions and pepper in oil until slightly soft (but not limp).
2. Dry the chicken, sprinkle salt and paprika on both sides of chicken breast and rub in.
3. Drizzle honey over both sides of the chicken and rub in until evenly coated.
4. Saute the chicken in same pan as onions and peppers, fry each side on medium-high heat. Cut chicken into strips.
5. In the same pan, add corn and saute for about 2 minutes, incorporating it into all of the leftover flavor from the chicken.
6. Place chicken, onions, peppers, corn, cheese, and sour cream on top of a warm tortilla.
7. Roll it up, and press on a panini press or grille.
8. Serve with sour cream and salsa
