Ever since my boyfriend came back from England, my fridge has been stocked with cheese. Lots of extremely sharp cheddar and my favorite, wensleydale with cranberries. I didn't want it to go to waste so we decided to put it to good use in some yummy burgers.
The first one we made was with the wensleydale and cranberry. When I shaped the burgers, I put the cheese inside. I caramelized some onions in dijon mustard and paired that with the burger on a ciabatta bun. We were skeptical at first to whether the cranberries would taste good inside a burger but it seemed to be a nice pair with the dijon caramelized onions. Sorry, you can't really see just how good it tasted from the picture but let me tell you, it was divine.
The second burger we made was a little more traditional. Just a basic burger with lots of very sharp cheddar cheese. I slathered some homemade cilantro mayo on the ciabatta along with a slice of tomato and it was also extremely yummy!
My workout yesterday was pretty intense so I didn't feel so bad eating these;)
