Spicy Tomato Baked Eggs

I have a confession to make. I am obsessed with Pinterest. Phew, glad that's finally off the chest.
If you don't know what it is, check it out. If you'd like an invite, just let me know! I pinned this recipe a couple months back and have been eyeing it recently. So I decided to make it yesterday with a friend.
The actual recipe is by BBC and you can see it----> Here.

We changed around a few things from the original recipe:
Instead of using a red chili, I added Sriracha hot sauce (Oh YES!), used dark brown sugar instead of caster (that's all I had in my pantry), and used regular tomatoes instead of cherry (although, cherry tomatoes would have been better).<---Holy run-on sentence! Also, added a little bit of curry powder and cardamom seeds. But just a little bit of both...don't go crazy with the curry powder!

Here is my half-assed recipe how-to (or you can just use BBC's, traitor!) :
1. Saute the onions and garlic in some olive oil until onions are yummy and tender.
2. Stir in the curry powder, cardamom seeds, sugar, cilantro, Sriracha and tomatoes.
3. Simmer everything until the mixture is thick and looks something like this:
4. With your spoon, make four little resting spots for the poor unborn baby chickens
5. Cover the pan until the egg whites are cooked but the egg yolk is still runny (a couple of minutes).
6. Garnish with fresh cilantro and serve!
I like to eat it with pita bread, honey, and cheese (preferably feta, but I only had swiss on hand).
When I was younger, my Dad used to make Persian omelettes for me and my brothers and we would make mini pita sandwiches with the omelette, feta and honey. Do it, it's DELICIOUS!

Back to Pinterest-ing. Seriously though, try this recipe..it's amazing!

Food.

I go through phases. Sometimes I'm obsessed with craft projects, decorating my itty bitty apartment, sometimes with fashion, but lots of the time with food. I will literally eat anything that you put in front of me (besides yellow mustard, YUCK). Here are some of my food adventures within the past week or so.
 {This was from a little deli in NYC. One had brie and ham and the other had sundried tomatoes, grilled chicken, and some amazing sauce I wish I knew}
 {This was a roast beef sandwich from a little cafe. It was divine. It came with a chipotle mayo. Maybe not the healthiest but so worth the calories}
 {There were a ton of these open buffets in NYC with the yummiest choices!}
 {Trying to eat healthier...yummy fruit parfaits}
 {We got a little bit drunk tipsy at the Empire State Building. This totally filled the gap}

 {Fresh food selections at a store in the Chelsea Market}

 {Me and Caro split these sandwiches. The first one was turkey and mozzerella with sundried tomato pesto on garlic ciabatta bread. The second one was swiss and ham. Kind of boring, I know, but the brioche bread was DELISH}

{Cupcakes from Eleni's}
{I know that New York is famous for their bagels but HOLY HEAVEN! Yummiest cinnamon bagel I've ever had}
 {"The Indiaatlantic". Spiced fish with sweet onion chutney and curried sweet potatoes. A-m-a-z-i-n-g}
{Banh Mi Sandwich with picked veggies. Oh so yummy!}
{This is what I had for breakfast. Smoked salmon & cream cheese bagel. With a bit too many onions}

I hope this post made you as hungry as its already made me. Isn't hunger such a beautiful feeling? Especially when you know that you just went grocery shopping and the fridge is stocked?! Off to the kitchen!

Highlights...

Here are some pictures from my trip to New York and Las Vegas. I went with my friend Carolin, who is from Germany. She was pen pals with my older brother when we were about 14 years old and she came to visit a few times and we've been great friends ever since. We both visit each other at least once a year...and hopefully I'll be in Germany to visit her next summer!

{These are in the lobby of our hotel in Manhattan}
 {Empire State Building}

{Hanging out on the rooftop}
 {Yummy cupcakes at Eleni's in the Chelsea Market}
 {Brooklyn Bridge}

{Central Park}
New York, I love you. Seriously. You complete me. I will move there one day!
Now for Vegas.....
{Total stranger took this shot. Pretty good I'd say}
{Our hotel in Vegas was fab-u-lous! We had an amazing view of the strip}
 {At the Venetian}

I really wish we could have gone to the Grand Canyon while we were near it in Vegas, but we just didn't have enough time. Oh well, good excuse to go back ;)

Now it's back to the real world. I am already planning my next vacation! Good night world!

The world...

..Is such a tiny place.

The strangest thing happened to me today . Met this girl today..her name is Sara Eslamlou. We added each other on facebook about a year ago because our names were similar(Mine is Sara Eslami) and we were both Iranian. But we had never met before, only talked a few times. Today as we were getting onto the ferry to go back to Manhattan, she comes running up to me because she recognized me from facebook. The world is seriously a tiny place!!  She is from Minnesota and I´m from Florida. Yet we just so happen to bump into each other in one of the largest cities in the world. Seriously, what are the chances? I was in total shock. Isn´t she gorgeous?

On a weirder note, how cool is my sweet bruise? A guy on the ferry today stared straight at it and then pointed. Didn´t even look me in the face. And then walked away with a weird look on his face. Thanks. For making me feel like a circus freak. Oh well, it keeps the weirdo´s away ;)

The Big Apple!

Today was our first day in New York City! I am completely in love with this city. The hustle and bustle of everything makes it so exciting. Here are a few of my favorite photos of the day....
 {On the roof of our hotel - The Pod Hotel}
 {Eating ice cream in Central Park}
 {Me and Alton Brown! AHHH!!! We actually were trying to find the food network building and I told my friend Caro to ask this random guy where it was. When he turned around I freaked!}
 {Eating yummy sandwiches on the rooftop}
 {I am a HUGE John Lennon fan. This picture does not show the excited state I was in}
 {The lobby of our hotel. Love the wood walls/ceilings and those lamps!}
 {Other section of the lobby}
{Adorable old man reading the paper on the subway}

I will be adding lots more soon. Off to bed now. Big day tomorrow!!
